October Halloween / Samhain Onion Recipe

- 6 Each Onions (Medium sized)
- 1/2 Pound Red Cabbage
- 2 Cloves Garlic (Minced)
- 1 Tablespoon Vegetable Oil
- To Taste Salt & Pepper
- 1 Cup Water
- 1/2 Tablespoon Cornstarch
- 1/2 Cup Chicken stock
- 2 Tablespoons Parmesan Cheese (Grated)

Instructions
- Peel the onions, cutting off the ends so they will sit up in the pan. Clear out the center of the onion, leaving at least 1/3 inch thickness to create a shell for the filling. Keep about 1/4 cup of the onion for the filling and reserve the rest for other magical cooking projects. Using a steamer, tenderize the whole onions over boiling water for about 15 minutes. While they cook, sauté the 1/ 4 cup of onion remnants, garlic, and cabbage in a frying pan until lightly browned. Add the water, continuing to cook until the cabbage is tender and translucent. Stir the cornstarch mixture with the chicken broth, adding it to the cabbage blend. Simmer until thickened. Add salt or pepper to taste. Use this to fill each onion shell. Sprinkle with Parmesan cheese.
