  • 1 Onion (Chopped)

  • 2 Cups Brussels sprouts (Trimmed and chopped)
  • 1 Tablespoon Flour
  • 2 Cups Chicken stock
  • 1 Teaspoon Garlic (Optional)
  • 1/2 Cup Heavy cream
  • To taste… Salt and pepper
  • Just enough… Cheddar cheese (Grated)

Instructions
  1. Melt the butter and use it to sauté the onion and potato. Add the chopped Brussels sprouts. Cook for 5 minutes, stirring regularly. Add the flour, continuing to stir. Once the flour is incorporated, pour in the stock a little at a time. Add the salt and pepper, and simmer for half an hour. Transfer the soup to a blender and mix until smooth. Reheat with the cream, then serve with a garnish of grated cheese.
