Instructions
Melt the butter and use it to sauté the onion and potato. Add the chopped Brussels sprouts. Cook for 5 minutes, stirring regularly. Add the flour, continuing to stir. Once the flour is incorporated, pour in the stock a little at a time. Add the salt and pepper, and simmer for half an hour. Transfer the soup to a blender and mix until smooth. Reheat with the cream, then serve with a garnish of grated cheese.
