- 1 Tablespoons Butter (Salted)
- 3 Tablespoons Red Onion (Chopped fine)
- 1 Teaspoon Garlic (Fresh, minced)
- 1/2 Cup Sparkling Wine (Alternatively Pink Rose)
- 1 Each Mango (Small, pulped)
- 1/2 Cup Chicken stock
- 1/4 Cup Light Cream
- 1 Teaspoon Lime Juice
- To Taste Salt & Pepper
- 2 3/4 inch Mahi Mahi Steaks
- 1 Pat Butter
- 1 Each Lime (Garnish)

- Sauté the onion and garlic in butter until the onions are lightly browned (if you feel creative, pattern these in the frying pan so they look like a dollar sign). To this, add the wine and cook over a low flame until the entire mix is reduced by two-thirds. Pour this into your blender, adding the mango and chicken stock. Begin blending slowly, adding the cream, juice, and spices. Return this to your original pan and cook it down so that there is one cup of warm sauce total. Take out your fish steaks, rinse them in cold water, and gently score them crosswise so the sauce will get inside after you braise. Get a pan evenly heated over a medium flame (Iron pans are a plus). Add the butter to your pan. Lay the fish down getting a light brown glow to each side. When you turn the fish, make sure to spoon the butter on the top of each steak. The fish will be done in about 6 minutes (3 minutes per side). The fish is done when it looks opaque on all sides. Serve with sauce poured over the top and a side of asparagus or another favorite vegetable.
