- 2 Tablespoons Butter
- 1 Onion (Chopped)
- 1 Potato (Small)
- 2 Cups Brussels sprouts (Trimmed and chopped)
- 1 Tablespoon Flour
- 2 Cups Chicken stock
- 1 Teaspoon Garlic (Optional)
- 1/2 Cup Heavy cream
- To taste... Salt and pepper
- Just enough... Cheddar cheese (Grated)

- Melt the butter and use it to sauté the onion and potato. Add the chopped Brussels sprouts. Cook for 5 minutes, stirring regularly. Add the flour, continuing to stir. Once the flour is incorporated, pour in the stock a little at a time. Add the salt and pepper, and simmer for half an hour. Transfer the soup to a blender and mix until smooth. Reheat with the cream, then serve with a garnish of grated cheese.
